Tarhana was discovered to prevent yoghurt from spoiling. Its preparation varies depending on the region. The most basic ingredients are yoghurt, salt, mint, pepper and tarhana herb, which are used in every region. It contains vitamins and minerals. Tarhana is generally consumed as soup during the winter months.
HOW TO MAKE TARHANA SOUP?
1 cup powdered tarhana
7.5 cups hot broth
2 tablespoons sunflower oil
1 teaspoon of tomato paste
1 teaspoon of salt
​1 teaspoon black pepper
1 teaspoon of mint
1 teaspoon of chili pepper
2 cloves of garlic
Put the tarhana in a bowl and dissolve it with 1 glass of broth.
Meanwhile, put the oil and tomato paste in the pot and stir until roasted.
Then add the broth. Add the dissolved tarhana into the boiling broth.
After mixing well, chop the spices and 2 cloves of garlic and add them to the soup.
