You should be careful when drying eggplants and throw away rotting or spoiled eggplants, otherwise they may damage other eggplants.
You can put dried eggplants in a cloth bag or a bag and put a clove of peeled garlic and 1 teaspoon of baking soda inside and keep them in a cool and moisture-free place.

If it rains while drying, be careful not to get rainwater on them, otherwise the peppers will rot.
You should keep it in an environment away from moisture and light. Put them in cloth bags and hang them in a cool place.
