About Gaziantep Pistachios

The homeland of pistachios is Turkmenistan, Iran and Turkey. Türkiye ranks 3rd in the world in pistachio production. The countries that produce the most pistachios are the USA, Türkiye and Iran. We can say that the highest pistachio production in Turkey is Şanlıurfa, Siirt, Kahramanmaraş, Diyarbakır and Gaziantep. Although pistachio production is mostly produced in Şanlıurfa, marketing and export is mostly done in Gaziantep.

When it is time to pick the pistachios, the outer shell softens and is easily separated from the inner shell. When collected early, it is in the form of a green pistachio. While collecting, the bay beans must be plucked by hand; it is not right to pluck the peanuts one by one without breaking the bay window. They are sorted and taken to exhibition places.

The granulation, drying and sorting processes of pistachios until they are collected and sent to the warehouse for storage are called exhibition area operations. After pistachios are dried, they are stored in jute sacks. Temperature and humidity levels should be taken into consideration while stored in warehouses. It should be stored in cool, dry and ventilated places.

The process of separating the outer red shell from the inner shell is called roasting. The red shell is softened with water or steam and roasted in roasting machines in Devlip.

The most common and most popular form of pistachios is roasted salted pistachios. To roast pistachios, the pistachios must be shelled and cracked. It is obtained by mixing in ovens at a certain temperature and with a certain amount of salt.
